A pleasantly sweet flavor, but there is very little edible flesh surrounding a relatively large seed.

Despite the viburnum dentatum being a deciduous shrub, the small clusters of fruit that appear in late summer and autumn are often referred to as blackberries or blackcaps. However, these fruits have far less flesh for their size than other berries such as raspberries or strawberries. At this time of year you may find yourself with a mass quantity of viburnum dentatum fruit but be unable to make use of them all! So what can you do with them? Why not try one of our suggestions below:

Viburnum Dentatum Strawberry-Rhubarb Crisp

Ingredients:

- 1 lb 2 oz (510 g) diced rhubarb

- 1lb viburnum dentatum berries, washed and drained

- 3/4 cup brown sugar

- 3 tbsp wholemeal flour or oatmeal

- 1/2 teaspoon cinnamon powder

How to Prepare :

Place viburnum dentatum berries in a baking dish. Sprinkle with flour, cinnamon and the brown sugar. Toss together to coat evenly. Place the diced rhubarb on top then bake for about 30 minutes or until golden brown. Serve warm with custard. Viburnum Dentatum Berry Pie Ingredients: — 9 oz viburnum Dentatum berries, washed and drained — 3 cups strawberries — Sugar to taste — 1/2 cup flour — 1 tsp cinnamon powder — 7 tbsp cold butter, cut in pieces How to Prepare: Combine viburnum dentatum berries and strawberries. Next add two tablespoons of the flour and one tablespoon of sugar, stir well. Place this mixture into a 9 inch pie dish. Mix together the rest of the dry ingredients then rub in the butter until it forms fine crumbs. Sprinkle this over viburnum Dentatum berry mixture. Bake for 35 minutes at 450F or until golden brown. Serve hot with ice cream or custard.
